Apostrophe Question

Why does Beef ‘O’ Brady’s have an apostrophe before the O?  And why, on their home page, do they refer to their stores as Beef’s?  Beef’s what?  Seriously.

In 1995, Jim Mellody dreamed up the idea of a neighborhood pub where friends and families could gather to enjoy good food and sports in a comfortable, friendly atmosphere. Today, there are Beef’s popping up all over the country. Call it the “Luck of the Irish” with a lot of hard work thrown in.
